- Half cup butter
- One cup minced celary
- Three table-spoons minced shallots
- one quart half-and-half cream
- Two (Twelve ounce) containers fresh shuked oysters, undrained
- salt and ground black pepper to taste.
- one pinch cayene pepper, or to taste.
Further directions:
Melt the butter in a large skillet over medium heat, and cook the celary and shallots until shallots are tender. Pour half-and-half into a big pot over middle-high heat. Mix in the buter, celary, and shallot mixture. Stir continuously and when the mixture is almost boiling, pour the oysters and thier liquid in to the pot. Spice with salt, pepper, and cayene pepper. Stir continuously until the oysters bend at the ends. When the oysters bend the stew is finished cooking; turn off the heat and serve.
